- Lean pork
- Sweet bean sauce(Tianmianjiang)
- Scallion(white part)
- Tofu Pi(Dried tofu skin sheets)
- Egg white
- Potato starch
Instructions

- Julienne lean pork into matchsticks. Massage with egg white, starch, salt, wine to coat (prep for Hua Chao).
- Julienne the white parts of scallions into hair-thin strands and lay them on a plate.
- Heat generous oil in a wok, flash-fry the pork at low temperature, stirring to separate. Remove instantly when it turns white (technique for ultra-tender meat).
- Leave a little oil, add
- tbsp 'Tianmianjiang' (Sweet bean sauce), and slow-fry on low heat to maximize the roasted paste aroma.
- Add sugar, soy, and broth. Return the pork and flash-toss on high heat until brilliantly glossy.
- Serve over the scallions, eaten wrapped in Tofu Skin.
