  • Sakura shrimp(dried)
  • Egg
  • Green scallions
  • Salt
  • White pepper

Instructions

  2. Prepare high-quality dried Taiwanese (Donggang) Sakura shrimp.
  3. Heat slightly generous oil in a wok, slowly flash-fry the Sakura shrimp on low without burning. Once crispy and the intense savory aroma transfers to the oil, remove shrimp with a strainer (Shrimp Oil complete).
  4. Heat the remaining 'Shrimp Oil' on high, pour beaten egg, and toss in white rice while runny.
  5. Loosen rice with a ladle, frying to coat every grain with the shrimp oil.
  6. Season with salt, a little white pepper, and minced scallions (very little soy sauce to prevent muddy color).
  7. Finally, return the crispy Sakura shrimp to the rice, toss briefly to finish.
