- Halve a whole pineapple lengthwise, hollow out the inside to make a 'pineapple bowl'. Dice the extracted flesh into 1cm cubes.
- Heat oil in a wok, sauté peeled shrimp and diced ham (or char siu).
- Add beaten egg and white rice, stir-fry on high until crumbly.
- Add Taiwanese curry powder (or soy sauce and a little sugar) to color the rice yellow (or brown), season with salt and white pepper.
- Finally, add the raw diced pineapple and roasted cashews, tossing briefly so too much juice doesn't leak.
- Heap into the pineapple bowl, finishing with a generous sprinkle of 'Rou Song' (sweet pork floss).
