  • Shredded ginger
  • Pork bone broth
  • Rice wine
  • Sesame oil

  3. Boil pork bone broth in a pot, add massive shredded ginger.
  4. Toss in raw rice (or cold cooked rice), cook in Taiwan's unique 'Zosui style (Fan Tang)' where rice grains retain their shape.
  5. Once rice absorbs soup and softens, toss in the prepped pork liver all at once.
  6. Overcooking makes liver dry, so quickly turn off heat when the surface is white and inside is slightly pink for a 'crisp' texture.
  7. Season with salt, white pepper, and sesame oil, scatter chopped scallions to finish.
