  2. Prepare 'Bantiao', the symbol of Hakka culture: wide, chewy flat noodles made from rice flour.
  3. Prep sauce at the bottom of a bowl: mix premium lard (or scallion oil), soy sauce, thick soy sauce (Jiangyou Gao), and a little sugar.
  4. Boil Bantiao briefly (1-
  5. mins) in hot water. Blanch bean sprouts and chives with it.
  6. Put thoroughly drained Bantiao and veg in the bowl.
  7. Top with sliced boiled lean pork, and sprinkle a heaping tablespoon of 'You Cong Su (crispy fried shallots)'—the lifeblood of Hakka cuisine—as much as possible.
  8. Right before eating, mix thoroughly so the lard and soy sauce cling thickly to the flat noodles.
