- [Broth & Fillings] Since pork is omitted, 'dried shiitake' umami is life. Rehydrate, chop finely, and keep the soaking liquid. Rehydrate shredded soy meat and squeeze out water.
- Julienne cabbage, carrots, wood ear mushrooms, and Five-spice Dougan (firm tofu).
- Heat plenty of veg oil (blended with sesame oil) in a wok, slowly sauté shredded ginger and shiitake to explode the aroma (Su Shi forbids garlic/scallions).
- Add soy meat and veg, season with shiitake liquid, vegetarian soy sauce, a little sugar, and white pepper.
- Toss in boiled Chinese noodles (You Mian), stir-frying/braising until the noodles completely absorb the veg and mushroom umami broth.
