  2. Prepare 'You Doufu (Thick fried tofu)' sold in Taiwanese markets—fried slightly hard on the outside and fluffy inside—and pour boiling water over them to remove excess oil.
  3. [Lu Zhi] Use the large pot where Lu Rou Fan ingredients (minced pork, shallots, star anise, soy sauce, rock sugar) are simmering (so the meat fat and extract soak into the tofu).
  4. Drop the blanched You Doufu into this pot.
  5. Simmer on low for over
  6. hour until the tofu's white parts are completely dyed brown and it becomes so gooey it almost falls apart when held with chopsticks.
  7. Turn off heat, let cool in the sauce to infuse flavor further.
  8. Plate in a small dish, pour braising liquid (or a little Tianla Jiang) over the tofu, garnish with cilantro or scallions.
