- [Gansi] Prepare 'Gansi' (shredded pressed tofu) sold in Taiwanese markets, made by pressing tofu to remove moisture and shredding it. *Briefly boil in baking soda water to soften, wash to remove alkaline smell.
- Julienne celery and carrots to the same thickness as Gansi.
- Boil water in a pot, briefly blanch carrots and Gansi for dozens of seconds, drain and cool (leave celery raw for crunch or boil very briefly).
- Put all ingredients in a bowl, add plenty of 'Taiwanese sesame oil (white sesame oil)', salt, a little sugar, and a little chicken broth (or water).
- Mix firmly by hand as if massaging, and chill thoroughly in the fridge to let flavors meld.
