  2. [Caipu Prep] Wash Taiwan's uniquely very salty 'Caipu (salted dried radish)', soak in water for a while to appropriately desalt.
  3. Squeeze water out firmly, mince roughly.
  4. Oil a pan, add chopped Caipu and a little chopped scallion (or garlic), sauté slowly on low until moisture evaporates and it smells 'crispy' and fragrant, then remove (this draws out the radish sweetness and umami).
