- Add salt, white pepper, sesame oil, a little sugar, and 'potato starch' and 'egg white' as binders, kneading firmly until sticky.
- [Wrapping] Traditional Taiwanese methods use 'caul fat (Wang You)', the net-like fat around pig organs (melts to make the crust crispy and rich). Spread caul fat (or thin tofu skin/spring roll wrapper), roll the filling into a long thin stick (sausage shape).
- Briefly dip the surface in a thin batter of flour, potato starch, and water.
- Fry slowly at 160°C to cook through, finishing at 180°C to make the surface ultra-crispy.
