Description

  • Cabbage
  • Soybean flour
  • Rice flour(or Wheat flour)

Instructions

  1. [Authentic Recipe]
  2. [Batter] Dissolve Zailai rice flour (or wheat flour) and 'Soybean flour (Huangdou Fen)' in water to make a thick special batter (soybean flour makes it extremely crunchy when fried).
  3. [Ingredients] Wash fresh small oysters in salt water; chop chives and cabbage finely, seasoning lightly with salt and pepper.
  4. Dip a 'flat round ladle specific for Ode (or a large spoon)' in hot oil to grease it.
  5. Pour a thin layer of batter into the ladle bottom, heap the chopped veg, and place 4-
  6. oysters in the center.
  7. Pour more batter over the top to completely hide the ingredients (forming a UFO shape).
  8. Submerge the whole ladle gently into 170°C oil. Once the outside sets, pop it off the ladle and fry until the whole thing is dark golden and extremely crunchy.
