- Boil water with green scallion parts, sliced ginger, and rice wine.
- Add pork belly, boiling briefly to render excess fat (if using a block, cook through then slice ultra-thin).
- Briefly shock the boiled pork in cold (or ice) water to tighten the meat, and drain thoroughly.
- [Sauce (Suanni Jiangyou)] Mix over
- tbsp of 'intense raw grated garlic (Suanni)' with Taiwan's sweet Jiangyou Gao, sesame oil, and a little sugar and black vinegar.
- Lay shredded ginger (or cucumber) on a plate, arrange the thin boiled pork fluffily on top.
- Pour the thick garlic sauce heavily over the top, and scatter scallions.
