- tbsp of the key to flavor and color: 'Hongzao' (a bright red, sake-lees-like fermented seasoning made from red yeast rice).
- Mix Hongzao with grated garlic, soy sauce, sugar, five-spice, white pepper, and rice wine.
- Firmly massage the pork in this bright red sauce, and rest in the fridge overnight (or 12+ hours) to age, fixing the red color and deep umami in the meat.
- Coat the marinated meat with 'coarse sweet potato flour (Digua Fen)', let sit
- mins until damp (prevents batter from falling off).
- Fry slowly at 160°C to cook through, finishing on high to make the crust ultra-crispy.
- Slice thinly, garnish with shredded ginger, and eat dipped in sweet chili sauce (Tianla Jiang).
