Instructions

  2. [Stinky Tofu] Prepare raw 'Stinky Tofu', intensely smelling tofu fermented for months in a plant-based brine (fermented amaranth greens, etc.).
  3. Prepare two oil pots. First, fry slowly in low 140°C oil until the tofu puffs and cooks through.
  4. Remove, then drop into high 180°C+ oil (double-fry). Fry rapidly until the surface is deep golden and 'ultra-crunchy', sounding hollow when tapped with chopsticks.
  5. Drain, and use scissors to cut into quarters (or make a cross slit) for easy eating.
  6. [Pao Cai] Generously garnish with 'Tai-style Pao Cai', Taiwan's unique sweet/sour pickled cabbage (cabbage salt-rubbed and pickled with vinegar, sugar, chili).
  7. Inject grated garlic, sweet thick soy sauce (Jiangyou Gao), and chili sauce into the tofu slits to serve.
