  • Green scallions
  • White sesame

Instructions

  2. [Dough] Knead all-purpose flour, yeast, and a little sugar with warm water, and proof. Thicker than Xiaolongbao, giving a chewy, fluffy bread-like feel.
  3. [Filling] Knead minced pork with chopped scallions, ginger, soy sauce, and sesame oil. The biggest feature is mixing in massive 'pork aspic (Pi Dong)' that melts with heat.
  4. Flatten dough to palm size, wrap filling, pleat, and seal tightly.
  5. Heat plenty of oil in a giant flat pan, pack the Shengjianbao tightly.
  6. Pour water, cover with a thick wooden lid, and steam rapidly on high.
  7. When water evaporates, use the remaining generous oil to fry the 'bottoms' deep golden brown until extremely crunchy.
  8. Sprinkle white sesame and chopped scallions on top to finish.
