Description

A banquet dish wildly popular across China. A massive 1kg+ freshwater fish (Tilapia or Grass Carp) butterflied, charcoal-grilled until crispy, then placed in a giant rectangular iron pan and boiled continuously in a spicy Hot Pot broth with vegetables.

Recipe

Ingredients

  • Massive freshwater fish(Tilapia/Sea Bass)
  • Vegetables(Lotus root etc.)
  • Doubanjiang
  • Chili
  • Sichuan peppercorn

Instructions

  1. [Authentic Recipe]
  2. Scale and gut a giant freshwater fish, butterfly it from the back, and marinate with salt, wine, scallion, ginger.
  3. Clamp in a grill basket and charcoal-grill (Kao) until the skin is scorched and crackling crispy.
  4. Line a massive rectangular iron pan with celery, lotus root, potatoes, and enoki.
  5. In a wok, fry Doubanjiang, Sichuan pepper, chili, massive garlic and ginger to create a Ma La Hot Pot broth.
  6. Slam the giant grilled fish on top of the vegetables, and flood the pan with the fiery broth.
  7. Place the pan over two tabletop stoves (or a special induction heater) and serve boiling furiously.
