Instructions

  2. Cube firm tofu and blanch in salted boiling water to firm it up and draw out moisture.
  3. Heat generous oil in a wok, thoroughly fry minced beef (beef, not pork, is authentic) until crispy and brown.
  4. Add premium 'Pixian Doubanjiang', Douchi (black beans), and chili powder, frying on low until the oil bleeds bright red.
  5. Pour in broth, add tofu, season with soy/sugar, and simmer for a few mins.
