  • Pork ribs(bone-in)
  • Tomato ketchup
  • Black vinegar(Wu Cu)
  • Sugar
  • White sesame

Instructions

  2. Cut bone-in pork ribs (Pai Gu) into bite-sized pieces, season with soy sauce, wine, and garlic.
  3. Coat with potato starch (or sweet potato flour) and deep-fry at 180°C until ultra-crispy.
  4. [Tang Cu (Sweet and Sour Sauce)] In a pan, boil tomato ketchup, Taiwan's sweet black vinegar (Wu Cu), sugar, water, and a little soy sauce (features more ketchup/sugar and black vinegar richness than Japanese sweet and sour pork).
  5. Thicken the sauce with potato starch slurry.
  6. Toss the freshly fried ribs into the pan, tossing quickly until glossy and coated thickly with the sweet and sour sauce (many shops use only meat, no veg).
  7. Sprinkle white sesame to finish.
