- Use yellow 'Jidan Doufu' (Egg Tofu) kneaded with egg. Dice into cubes and bare-fry (or fry with potato starch) until lightly golden.
- The absolute star: boil 'Xian Dan' (salted duck egg), extract only the yolk, and mash finely with a fork.
- Heat plenty of oil (or butter) in a pan with minced garlic and chopped scallions on low.
- Toss in the mashed Xian Dan yolk, sautéing to blend with the oil. The yolk emulsifies, bubbling up into 'fine golden foam like crab bubbles' (this is Jin Sha).
- Toss the fried egg tofu into the pan, tossing gently to avoid breaking the tofu, thickly coating the whole thing in the golden salted egg yolk sauce.
- Add a little red chili for color to finish.
