  • Pork back fat

  • Plum sauce(or Chili sauce)

Instructions

  2. [Shrimp Filling] Remove veins from peeled shrimp, smash with the flat of a cleaver, then chop roughly (retains plump texture).
  3. Add 'minced pork back fat (the secret to juiciness and richness)', egg white, potato starch, salt, white pepper, and sesame oil. Knead by throwing it against the bowl until highly sticky.
  4. Spread
  5. 'spring roll wrapper' (or ultra-thin rice paper) on a board, spread the shrimp paste evenly about 1cm thick.
  6. Cover with another wrapper, pressing firmly by hand to expel air.
  7. Pierce a few holes with a toothpick to prevent bursting while frying.
  8. Heat generous oil in a pan, shallow-fry until both sides are beautiful golden brown (like a full moon).
  9. Cut into
