- Slice yellow 'Jidan Doufu' (Egg Tofu) made from soy and egg thickly, shallow-fry (or bare-fry) in generous oil until both sides are golden and crispy, then remove.
- Heat a thick beef steak iron plate (Tieban) on a gas stove until smoking.
- Heat oil and a little butter in a wok, sauté shredded pork, onions, carrots, bell peppers, wood ear, etc.
- Season with soy sauce, oyster sauce, sugar, and plenty of 'coarse black pepper (Hei Hujiao Jiang)', thicken with potato starch slurry.
- Coat the fried tofu in the sauce.
- Drop a little butter on the hot iron plate, vigorously pour the wok ingredients and sauce over it.
- Carry to the table while it emits an explosive 'sizzle!' and smoke of scorched butter and black pepper.
