- Cut bone-in pork ribs (Pai Gu) into bite-sized pieces, massage with soy sauce, wine, whole egg, and potato starch.
- Deep-fry at 180°C until the surface is crispy and cooked through.
- [Orange Sauce (Cheng Zhi)] In a bowl, mix 100% orange juice (preferably freshly squeezed), white vinegar (or lemon juice), sugar, a little salt, and potato starch.
- Heat a little oil in a wok (or pan), pour in the orange sauce.
- Heat on medium until the sauce becomes translucent and turns into a gooey, beautiful orange 'gravy'.
- Toss the freshly fried ribs into the wok, tossing quickly until fully glazed in orange.
- Plate, garnish with fresh orange slices or white sesame to finish.
