  3. [Filling] Add plenty of 'You Cong Su (fried shallots)'—the lifeblood of Hakka cuisine—to minced pork, seasoning fragrantly with soy sauce, five-spice, and white pepper.
  4. Pinch small pieces of dough, roll thin and round, enclose filling, and seal half-moon (or triangle).
  5. Boil Crystal Dumplings until the dough is completely translucent and they float on the surface.
  6. Drain, plate, and eat with Jiangyou Gao (thick soy sauce), sesame oil, and a little minced celery (can also be put in soup as 'Tang Shuijingjiao').
