  • Suan Cai(Fermented mustard greens)
  • Pao Jiao
  • Garlic
  • Sichuan peppercorn
  • Chili

Instructions

  2. Fillet a white fish, separate bones and meat. Slice meat paper-thin, massage with salt, egg white, starch to coat.
  3. Fry fish bones/head with scallion and ginger, pour boiling water, and boil fiercely to extract a cloudy, rich fish broth.
  4. In another wok, chop the soul: 'Suan Cai' (lacto-fermented mustard greens). Fry heavily with Pao Jiao (pickled chilies) to mellow the acidity.
  5. Pour in the fish broth, bring to a boil, and drop in the coated fish slices one by one.
  6. Once the fish turns white and fluffy, transfer to a bowl.
  7. Finally, top with Sichuan peppercorns and dried chilies, and violently splash smoking-hot oil over them to erupt the aroma.
