  • Egg
  • Black pepper
  • Butter
  • Oyster sauce

Instructions

  1. [Authentic Recipe]
  2. [Sauce] Make the lifeblood 'Hei Hujiao Jiang' (black pepper sauce). Sauté minced garlic and onions in butter, add massive coarse black pepper, soy sauce, oyster sauce, sugar, and water. Boil down and thicken heavily with potato starch (non-spicy Mushroom Sauce is also popular).
  3. Briefly sear a beef steak (tenderized by scoring and pounding).
  4. Heat a thick cow-shaped steak iron plate on a stove until smoking.
  5. Oil the hot plate, dump boiled thick yellow noodles (You Mian or udon).
  6. Place the steak next to the noodles, crack a raw egg into the empty space.
  7. Right before serving, pour the special sauce like a waterfall. Serve amidst explosive sizzling and rising smoke.

Trivia

[For Youth] Steak stalls have the most seats and energy in night markets. It's not a high-end steak but a 'dish to eat junk sauce and noodles'. Taiwanese style includes all-you-can-drink sweet black tea and corn soup.

Eating tips & etiquette

[Unique Eating] The moment it's served, unfold a paper napkin to shield from oil splatters, then messily mix the soft-boiled egg, noodles, and sauce on the iron plate to eat!
