- Drop the dough into the oil; it instantly puffs up huge and becomes crispy.
- [Bomb Step] Crack a fresh raw egg 'plop' into the oil next to the dough.
- The moment the whites start to sizzle and set, quickly slide the dough over the egg to dock them completely.
- Remove from oil in seconds to keep the yolk entirely 'runny (liquid)'.
- Brush the surface thickly with Taiwan's sweet/spicy 'Jiangyou Gao' and 'special chili sauce', fold in half, and put in a paper bag.
