Cold noodles from Yanbian on the China-North Korea border. Similar to Korean cold noodles, but the beef broth is significantly sweeter, fruitier, and tangier, heavily garnished with apples/watermelon and a touch of chili.

- Boil beef bones and meat chunks for hours to extract a clear broth.
- Chill the broth, season with soy, vinegar, sugar, and the key ingredient: 'apple juice'. Freeze until slushy and icy.
- Boil dark noodles made of buckwheat/starch (or corn noodles) with such insane elasticity they require scissors. Shock in ice water to the limit.
- Plate the noodles and pour the sweet, sour, icy beef broth over them.
- Top with sliced beef, boiled egg, apple slices, watermelon, cucumber, and Yanbian-specific 'Yangnyeom' (chili paste).
