Instructions

  2. [Stinky Tofu Prep] Prepare raw 'Stinky Tofu' steeped in fermentation brine. Instead of regular square blocks, cut into 1cm-thick long sticks like shoestring French fries.
  3. Lightly wipe surface moisture off the cut stinky tofu with paper towels.
  4. Drop into 180°C hot oil, frying until the tofu sticks float and the entire surface is golden and 'ultra-crunchy' (being long and thin gives a larger crispy surface area than regular stinky tofu).
  5. Drain oil thoroughly and plate in a paper cup (or bowl) like fries.
  6. [Sauce Topping] Garnishing with Taiwan's sweet/sour 'Pao Cai' (pickled cabbage) is standard, but for youth, it's generously drenched in 'Cheddar cheese sauce', 'Honey mustard', 'Mentaiko mayo', or 'Thai sweet chili sauce'.
