- [Dough] Mix Zailai rice flour with a little sweet potato flour and hot water to make a soft, thick batter, whiter than central Ba Wan.
- [Filling] Season minced pork with Taiwan's sweet Jiangyou Gao and shallots. Prepare fresh small shrimp (Huo Shao Xia is best).
- Spread batter thinly in a small bowl (or special round mold), place pork filling and a 'whole shrimp', cover with more batter.
- Steam for ~
- mins until the dough turns translucent white and sets chewy (the Tainan way never deep-fries).
- Plate, serving with a slightly sweet 'special white sauce' (or pink sauce) made from rice flour and sugar, grated garlic, and cilantro.
