- [Crab Prep] Prepare fresh 'San Dian Xie' (blue crab) caught in Taiwanese port towns (characterized by
- spots on the shell). Remove carapace and gills, chop body into halves (or quarters). Crack large claws with the back of a knife.
- Spread a large double layer of aluminum foil, lay massive sliced onions and minced garlic (~
- tbsp) in the center.
- Place prepped crab, shell and all, on top.
- [Seasoning] Sprinkle salt and white pepper over the crab, and place 2-
- large chunks of the star ingredient 'Butter (Naiyou)' on it.
- Sprinkle a little rice wine (or white wine), fold and seal the foil tightly.
- Place on a charcoal grill net, steam-bake for ~10-
- mins until the foil puffs up tight and the scent of crab and butter leaks out.
