- [Black Sesame Filling (Zhi Ma Xian)] Knead ground black sesame powder, powdered sugar, and the biggest key: 'lard (pork fat, or butter)' in a bowl. Lard makes the filling turn into a gooey liquid (magma) when heated. Chill solid in the fridge, roll into marble-sized balls.
- [Dough] Knead glutinous rice flour with warm water to earlobe-firmness. Boil a small piece (Guo Cui) and knead back in to draw out intense chewiness.
- Spread dough, wrap the chilled sesame filling, and roll perfectly spherical (ping-pong size) to prevent leaks.
- [Soup (Tangshui)] Boil water, sliced ginger, and brown sugar (or red sugar) to make a sweet, ginger-spiced syrup.
- Boil Tangyuan in a separate pot; when they float, transfer to the soup pot to finish.
