  2. [Batter] Mix cake flour, custard powder (gives the HK flavor), sugar, egg, evaporated milk, water, and 'tapioca starch (or sweet potato flour)' for chewiness into a wet batter.
  3. Heat a special 'iron double-mold with dozens of honeycomb-like round protrusions (Gai Daan Jai Ji)', oil lightly.
  4. Pour batter, immediately close mold, and flip upside down 'spin' (makes the inside of the round protrusions hollow and forms the shape).
  5. Bake both sides for a few mins until golden and crispy.
  6. Remove from mold, curl slightly (U-shape) while hot, expose to air to crisp the surface, put in a paper bag, and serve.
