  5. Place the shaved roast duck skin and meat, crisp shredded white scallions, and julienned cucumber.
  6. Fold the wrapper edges and roll up tightly like a spring roll so contents don't spill.
  7. Put in a paper bag, served to be eaten one-handed while walking.
