  2. [Making Douhua (Lifeblood)] Soak quality soybeans overnight, blend, and squeeze through a cloth to make rich raw soy milk.
  3. Boil soy milk thoroughly to remove raw bean smell.
  4. In a large container, prep a coagulant of 'edible gypsum powder (or nigari)' and sweet potato flour dissolved in water.
  5. Pour the piping hot soy milk vigorously from a high position into the container (do not stir). Leave it for tens of minutes to set into a jiggly 'Douhua', far smoother than silken tofu.
  6. [Syrup] Boil down brown sugar (or red sugar) and water, adding plenty of sliced ginger to make a 'special ginger brown sugar syrup'.
  7. Scoop thin layers of Douhua into a bowl, top with sweet, soft-simmered peanuts (Tu Dou).
  8. Pour warm ginger syrup (or ice water and cold syrup in summer) generously to serve.
