- [Brown Sugar Syrup (Tangshui)] Put Er Sha (Taiwanese red sugar) in a pot, scorch on low to caramelize (the secret to savoriness). Add water and brown sugar, boil down slowly into a thick rich syrup, and cool.
- [Toppings Prep (Peiliao)] Sweet-simmer beans like red beans, mung beans, kidney beans, peanuts. Arrange dozens of ingredients in the showcase: boba, Yu Yuan (taro balls), Aiyu jelly, grass jelly, pudding, fruit, etc.
- Customers point at the showcase to pick

- Plate the selected toppings generously at the bottom of a dish.
