  • Red bean paste(Wu Dou Sha)
  • Xian Dan(Salted duck egg yolk)
  • Cake flour
  • Bread flour
  • Unsalted butter(or Lard)
  • Egg yolk

Instructions

  2. [Xian Dan (Yolk) Prep] Extract yolks from raw salted duck eggs, spray lightly with rice wine, and bake briefly in the oven to remove raw smell (this yolk represents the full moon).
  3. [Filling] Roll Taiwan's unique smooth, oily 'Wu Dou Sha (black red bean paste)', and wrap one whole yolk inside it.
  4. [Dough] Wrap oil-dough (You Su) in water-dough (You Pi), roll and coil twice to make a flaky pastry dough with spiral layers.
  5. Tightly wrap the red bean/yolk filling in the dough into a ball.
  6. Generously brush the surface with egg yolk wash, and top the center with black (or white) sesame seeds.
  7. Bake in a 180°C oven for 25-
  8. mins until the surface is a glossy deep golden brown and the dough forms crispy layers.
