  • Starch syrup(Maltose)
  • Unsalted butter
  • Egg white
  • Sugar

Instructions

  3. [Syrup] Put starch syrup (maltose), sugar, and water in a pot, heat to make a high 130°C syrup.
  4. Whip egg whites in a bowl until stiff peaks form (meringue).
  5. Stream the piping hot syrup into the meringue like a thread while mixing on high with a hand mixer (creates the fluffy nougat base).
  6. Add melted butter and massive 'whole milk powder (decides the rich milk flavor)', fold quickly with a spatula.
  7. Dump the warm almonds in, knead to distribute evenly throughout the dough.
  8. Pour into a square tray, press flat, cut into rectangular sticks before it cools and hardens, and wrap in oblaat (edible clear paper) and candy wrappers.
