  2. [Almond Liquid] Soak 'Nanxing' (sweet apricot kernels with strong aroma/sweetness) overnight, blend, and strain through a cloth to extract pure white 'Almond Milk' (store-bought almond powder works).
  3. Put almond milk, regular milk, and sugar in a pot.
  4. [Taiwanese Secret] Instead of agar or gelatin, add plenty of water-dissolved 'tapioca starch (or potato/cornstarch)'.
  5. Heat on low, stirring powerfully and constantly with a wooden spoon to prevent burning.
  6. Remove from heat when the starch gelatinizes, the dough gets heavy, and develops 'a strong sticky stretchiness (chewiness) like mochi'.
  7. Pour into a square tray, chill solid in the fridge.
  8. Cut into bite-sized diamonds and plate.
  9. Eat topped on shaved ice, or drizzled with sweet brown sugar syrup (or honey water) and garnished with peanuts.
