- Slice ultra-tender pork tenderloin (Li Ji) into pinky-sized strips. Marinate with salt, pepper, wine.
- Coat heavily in sludgy soaked potato starch mixed with a little egg white.
- Fry at 160°C one by one to prevent sticking, remove. Raise oil to 190°C and double-fry until golden and rock-hard crispy.
- In a wok, fry tomato ketchup in a little oil to bloom the red color and tartness. Add massive sugar, white vinegar (or black), salt, and a splash of water. Boil and thicken heavily with starch slurry.
- Whisk hot oil (Ming You) into the sauce to create a mirror-like gloss. Dump in the fried pork, tossing violently for just seconds so the red glaze coats perfectly without ruining the crunch. Garnish with white sesame.
