  3. Shred lean pork (Rou Si), massage with a little soy sauce, wine, and potato starch.
  4. Heat oil in a wok, sauté garlic and scallions for aroma, fry the pork.
  5. When meat color changes, toss in chopped Xuecai, stir-frying to coat the pork with Xuecai's saltiness and umami. Balance flavor with a little sugar (Xuecai Rousi is complete).
  6. Warm a clear broth (Qingtang) made from chicken and pork bones.
  7. Place boiled white Chinese noodles (or thin noodles) in a bowl, pour broth, and generously top with Xuecai Rousi.
