  2. [Broth Prep] Rehydrate dried shiitake and slice thinly (absolutely keep the soaking liquid). Rehydrate and mince dried shrimp (Xiami).
  3. Season shredded pork (or coarse mince) with soy sauce and wine.
  4. Heat oil and shallots in a pot, fragrantly sauté dried shrimp, shiitake, and pork.
  5. Pour the shiitake soaking liquid and plenty of pork bone broth (or water) here, season with soy sauce, salt, and white pepper, and bring to a boil.
  6. Toss raw rice (or cooked white rice) into the soup. Do not make it gooey like Cantonese porridge; turn off heat while rice grains remain firm and soaked in soup (Zosui/Tangfan style).
  7. Plate and scatter chopped celery and You Cong Su (fried shallots).
