  2. [Noodles] Prepare Taichung's unique 'Da Mian' (yellow Chinese noodles thick like udon, heavy with lye water, same as used in Da Mian Geng).
  3. Instead of boiling, heap these noodles in a 'giant steamer (Zhenglong)' and steam-warm them piping hot with vapor (the main reason it's 'not fried').
  4. [Special Sauce] Prepare an intense garlic sauce mixing Jiangyou Gao (thick soy sauce), grated garlic, sesame oil, and a little pork bone broth.
  5. Upon order, plate the hot noodles from the steamer.
  6. Generously pour the garlic sauce over them, topping with a handful of boiled chives (or bean sprouts). Absolutely no meat toppings.
  7. Finish by generously self-squeezing Taichung's famous 'Dongquan Lajiao Jiang' (sweet/spicy red chili sauce).
