  • Hot Pot Base(Ma La Di Liao)
  • Chili
  • Sichuan peppercorn
  • Garlic
  • Soy sauce

Instructions

  2. Customers pick their favorite ingredients (lotus root, broccoli, spam, beef, shrimp, yuba, quail eggs) from a display case into a bowl.
  3. In the kitchen, hard veg and meats are quickly blanched (or flash-fried) separately and drained.
  4. Heat oil in a wok, slow-fry garlic, ginger, scallion, massive dried chilies, and Sichuan peppercorns to create fragrant 'Hong You' (red oil).
  5. Add 'Ma La Di Liao' (Hot Pot base), Doubanjiang, soy, and sugar to complete the sauce base.
  6. Dump all prepped ingredients into the wok, blasting on high heat, tossing violently to coat everything evenly in the spicy oil.
  7. Serve dumped into a massive bowl (or mini iron pot), garnished with white sesame and cilantro.
