- Chicken breast
- White sesame paste
- Peanut butter
- Cucumber
- Black vinegar
Instructions

- [Ji Si] Boil chicken breast moistly (without drying it out) in water with scallions, ginger, and wine. Cool, then hand-shred into fine threads.
- [Noodles] Boil yellow Chinese noodles (You Mian) slightly al dente, toss with veg oil, and chill rapidly with a fan (avoiding water rinsing helps sauce cling).
- [Ma Jiang (Sauce)] Based on white sesame paste (Zhimajiang) and unsweetened peanut butter, whisk smoothly with soy sauce, black vinegar, sugar, a little garlic, and cold water.
- Plate noodles, heap julienned cucumber and hand-shredded chicken (Ji Si).
- Pour the rich sesame-peanut sauce generously. Add chili oil if desired.
