Instructions

  2. 'Shijin' means mixed (various ingredients). Cut all fridge ingredients into bite-sized pieces: shredded pork, pork liver, peeled shrimp, squid, kamaboko, cabbage, carrots.
  3. Heat lard (or oil) in a wok, fragrantly sauté garlic and shallots (Hong Cong Tou).
  4. Briefly sauté pork, liver, and seafood, add veg and stir-fry together (drawing out ingredient umami here).
  5. Pour plenty of pork bone broth (or hot water) into the wok.
  6. Season with soy sauce, salt, white pepper, and a little rice wine, bringing to a boil.
  7. Toss unboiled yellow Chinese noodles (You Mian) directly into the wok, simmering on medium until noodles absorb the umami-rich broth (like making Champon).
  8. Plate, scatter minced celery and You Cong Su (fried shallots).
