Ingredients

Instructions

  1. [Authentic Recipe]
  2. Season thinly sliced beef with soy sauce, wine, a little sugar, and potato starch.
  3. Cut long scallions (or green scallions) diagonally into 5cm pieces, preparing a 'massive volume' equal to the beef.
  4. Heat oil in a wok, briefly velvet (or high-heat fry) the beef and remove (to prevent toughening).
  5. Leave a little oil, sauté garlic, shredded ginger, and red chili.
  6. Toss in scallions all at once, add soy sauce, oyster sauce, and wine.
  7. Return beef, toss violently on high heat for dozens of seconds until scallions wilt slightly and get a savory char.
  8. Serve over white rice in a bowl, sauce and all.

Trivia

[For Everyone] The tavern (Re Chao) staple 'Scallion Beef' served over rice (Hui Fan style). Instead of simmering like Japanese Gyudon, it's 'rapid-fried on high heat (Bao)', making its savoriness and punch exceptional. The king of hearty lunches.

Eating tips & etiquette

[Unique Eating] Use the 'soft, sweet scallions'—which have absorbed meat umami and oyster sauce to the limit—to wrap the rice and eat, even more than the beef!
