  • Ultra-thin rice noodles(Meifun)
  • Pork
  • Shrimp

  • Cabbage
  • Dried shrimp

Instructions

  1. [Authentic Recipe]
  2. [Prep (Lifeblood)] Rehydrate dried shiitake and shrimp, mince (keep soaking liquid). Briefly boil (or rehydrate) dried Taiwanese rice noodles (Hsinchu Meifun famous), cut short, cover and steam (secret to Q-Dan: chewiness).
  3. Cut shredded pork, peeled shrimp, cabbage, carrots, celery.
  4. Heat oil in wok, fragrantly sauté shallots (Hong Cong Tou), dried shrimp, shiitake.
  5. Add pork, shrimp, veg and stir-fry.
  6. Add shiitake liquid, pork bone broth (or water), soy sauce, salt, white pepper; bring to boil.
  7. Toss Meifun into the wok, stirring on medium heat until the rice noodles absorb every drop of the 'supreme soup'.
  8. Done when crumbly and fluffy.
