- [Pumpkin Prep] Peel Taiwanese pumpkin (Nangua: higher moisture/sweeter than Japanese), julienne finely (or grate coarsely).
- Rehydrate and mince dried shiitake and shrimp. Rehydrate and loosen Taiwanese Meifun in hot water.
- Heat oil in wok, fragrantly sauté shallots (You Cong Su), dried shrimp, shiitake, shredded pork.
- Toss in julienned pumpkin, sauté until coated in oil.
- Pour generous water (or pork bone broth), season with soy sauce, salt, white pepper. Cover and simmer until pumpkin breaks down gooey soft (this becomes the golden sauce).
- Add rehydrated Meifun, stir-fry/braise on medium so it completely absorbs the sweet pumpkin soup.
- Done when the whole dish turns beautiful golden and moisture evaporates.
