  • Red sugar(for smoking)
  • Oolong tea leaves
  • Thick soy sauce
  • Wasabi

Instructions

  1. [Authentic Recipe]
  2. [Shark Prep] Wash fresh shark meat (prone to ammonia smell) carefully with salt/vinegar, briefly boil to completely remove odor.
  3. Prepare blocks of shark skin (collagen-rich) or belly meat.
  4. [Smoking (Lifeblood)] Line a wok bottom with foil, heavily top with Taiwanese red sugar (Er Sha) and tea leaves (Oolong).
  5. Place boiled shark on a net above, cover, and heat on high.
  6. Smoke until the sugar chars, emitting thick brown smoke, dyeing the shark surface a beautiful 'golden/brown' and fixing the smoky aroma.
  7. Chill immediately in the fridge to tighten the flesh and set the skin into jelly.
  8. Slice bite-sized, serve with a small plate of 'wasabi (Jie Mo) and Jiangyou Gao (thick soy)'.
