- Slice the duck skin and meat into thin, easy-to-eat strips.
- Slice 'garlic scapes (Suan Miao)' diagonally. Their fresh pungency is essential to neutralize duck fat.
- Put duck and garlic scapes in a bowl.
- Add white vinegar, sugar, sesame oil, a little wine, and optional sliced red chilies, massaging to toss firmly (duck is already very salty and smoky, so no soy sauce needed).
